Prepare the spicy mustard spread: In a small bowl, whisk together the Dijon mustard, mayonnaise, hot sauce, garlic powder, and black pepper until well combined. Set aside.

Assemble the sandwiches: Lay out 4 slices of sourdough bread. Spread a generous amount of the spicy mustard spread on one side of each slice. Layer 2 slices of cheddar cheese on each of these 4 slices.

On top of the cheese, layer 1/4 pound of roast beef, followed by 1/4 pound of turkey breast on each sandwich. Add 2 strips of crispy bacon, a large lettuce leaf, a few slices of tomato, some red onion, and dill pickles.

Top each sandwich with the remaining 4 slices of sourdough bread. Spread the outside of each sandwich with softened butter.

Grill the sandwiches: Heat a large skillet or griddle over medium heat. Place the buttered sandwiches on the hot skillet. Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.

Remove from heat, slice each sandwich in half, and serve immediately.
