In a mixing bowl, add the besan. Gradually add 150 ml of water while continuously whisking to form a smooth, lump-free batter.

Add orange food color to the batter and mix thoroughly until the color is evenly distributed.

In a separate pot, add the granulated sugar and 150 ml of water. Place the pot on medium heat and stir continuously until the sugar completely dissolves.

Add green cardamom powder and 2 tablespoons of lemon juice to the sugar syrup and mix well. Continue to heat the syrup until it reaches a one-string consistency. Keep the syrup warm.

Heat a generous amount of ghee and oil in a deep pan for deep frying. The oil should be hot enough to fry the boondi quickly.

Once the oil is hot, hold a perforated spoon (boondi ladle) over the hot oil. Pour the prepared besan batter through the perforated spoon, allowing small droplets (boondi) to fall into the hot oil.

Fry the boondi in batches until they turn golden brown and become crisp. Remove the fried boondi from the oil using a slotted spoon and drain any excess oil.

Immediately transfer the hot fried boondi into the warm sugar syrup. Mix the boondi thoroughly with the syrup.

Cover the pot and let the boondi soak in the syrup for 10-15 minutes, allowing them to absorb the sweetness and soften.

After the soaking period, remove the boondi mixture from the pot. Take small portions of the boondi mixture in your hands. Press and roll the mixture firmly to form spherical laddus.

Garnish the prepared Motichoor Laddus with chopped pistachios before serving.
