In a medium saucepan, combine the 1 cup coconut sugar and 1/2 cup water. Heat over medium-low heat, stirring constantly until the sugar dissolves completely and the mixture begins to thicken slightly and become sticky.

Add the remaining 1 cup water to the saucepan. Increase the heat to medium and bring the mixture to a gentle simmer.

Add the 2 cinnamon sticks, the peels of the lime, lemon, and orange, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon ground coriander to the simmering syrup. Reduce the heat to low and continue to simmer for 5 to 10 minutes, or until the syrup has thickened to a syrupy consistency.

Remove the saucepan from the heat. Carefully strain the cola syrup through a fine-mesh sieve into a heatproof measuring cup or jar to remove all the solid ingredients (cinnamon sticks, citrus peels, etc.). Discard the solids.

Stir in the 1 teaspoon vanilla extract and 1/2 teaspoon bitters into the strained syrup.

Allow the homemade cola syrup to cool completely for at least 30 minutes before using. The syrup can be stored in an airtight container in the refrigerator for up to 2 weeks.

To assemble the drink: For each serving, fill a glass or mason jar with ice.

Pour 1/4 cup of the cooled homemade cola syrup over the ice, then top with 3/4 cup chilled soda water. Stir gently to combine the syrup and soda water. Serve immediately and enjoy!
