In a large bowl, combine the softened cream cheese, 1 cup of shredded mozzarella, all of the shredded cheddar cheese, the finely diced ham, garlic powder, onion powder, smoked paprika, and black pepper. Mix everything together until it's well combined and looks like a creamy, cheesy dream. This is the heart of our Mega Queso Explosión!

Lay out one large flour tortilla on a clean surface. Spread about 2-3 tablespoons of the cheese mixture evenly over the entire surface of the tortilla, leaving a small border around the edges. Don't be shy with the cheese, we want an 'explosión'!

Roll the tortilla up tightly, starting from one edge. Make sure it's nice and snug to prevent the cheese from escaping. Repeat this process with the remaining tortillas and cheese mixture.

Brush the outside of each rolled tortilla with melted butter. This is key for that golden, crispy exterior. Then, sprinkle the remaining 1/2 cup of shredded mozzarella cheese generously over the top of each buttered roll. We're going for a 'lluvia de queso' here!

Place the cheese rolls seam-side down on the prepared baking sheet. Bake for 12-15 minutes, or until the tortillas are golden brown and crispy, and the cheese is bubbly and melted. You'll know they're ready when your kitchen smells absolutely incredible. ¡Otro nivel!

While the rolls are baking, prepare the optional dipping sauce. In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, garlic powder, and smoked paprika until smooth. This sauce is the perfect companion for our cheesy delights!

Carefully remove the Mega Queso Explosión Rolls from the oven. Let them cool for just a minute or two before slicing them into thick, bite-sized pieces. Serve immediately with the dipping sauce. Get ready for that epic cheese pull!
