Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely. This will take about 45-60 minutes.

While the cake cools, prepare the strawberries. In a medium bowl, gently combine the hulled and sliced fresh strawberries with the granulated sugar. Let them sit for at least 15 minutes to macerate and release their juices.

Once the cake is completely cool, prepare the whipped cream. In a large, chilled bowl, combine the cold heavy cream, powdered sugar, and vanilla extract.

Beat with an electric mixer on high speed until stiff peaks form, about 3-5 minutes.

To assemble, slice the cooled cake horizontally into two layers. Place the bottom layer on a serving plate. Spread about half of the whipped cream over the bottom layer.

Spoon the macerated strawberries (including their juices) over the whipped cream. Place the second cake layer on top.

Top with the remaining whipped cream and, if desired, a few fresh strawberry slices for garnish. Serve immediately or chill until ready to serve.
