Heat the oil in a large pan or pot over medium heat.

Add the mustard seeds and cumin seeds to the hot oil. Let them splutter, which usually takes about 30 seconds to 1 minute.

Add the curry leaves to the pan and cook for another 15-30 seconds until fragrant.

Add the chopped onion and sliced green chilies to the pan. Sauté, stirring occasionally, until the onion becomes soft and translucent, about 5-7 minutes.

Stir in the ginger garlic paste and cook for about 1 minute, or until the raw smell disappears.

Add the cubed potatoes to the pan.

Sprinkle in the turmeric powder, chilli powder, and salt. Mix all the ingredients well to ensure the potatoes are evenly coated with the spices.

Pour in the water.

Cover the pan with a lid and reduce the heat to low. Cook for 10-15 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking and ensure even cooking.

Once the potatoes are soft, remove the lid and increase the heat to medium-high. Cook for another 2-3 minutes, stirring frequently, until any remaining water has evaporated and the potatoes are slightly browned.

Garnish with fresh chopped coriander before serving hot.
