Peel the potatoes. Cut the potatoes into thin strips, approximately 0.5 cm to 1 cm thick.

Place the cut potato strips into a bowl. Add enough water to cover the potatoes. Stir in 1 tablespoon of salt and 2 tablespoons of white vinegar. Mix well and let the potatoes soak for 15 minutes.

After soaking, drain the water from the potatoes. Transfer the potato strips to a clean kitchen towel and thoroughly dry them with the towel.

Heat oil in a pan over medium heat. Add the dried potato strips to the hot oil. Fry the potatoes for 8 minutes until they are slightly cooked but not yet golden; they should be soft. Remove the potatoes from the oil and place them on a rack to cool down completely.

Once the potatoes have cooled, return them to the hot oil. Fry for another 5 minutes, or until they turn golden brown and crispy.

Remove the golden-brown fries from the oil and place them on a plate lined with paper towels to absorb excess oil. Season with salt to taste and serve immediately.
