Place the chicken thighs in a large bowl. Add the Shao Xing cooking wine, sesame oil, low sodium soy sauce, garlic chili sauce, granulated garlic, black pepper, red chili powder, and Southern Made Spices. Mix all ingredients thoroughly until the chicken is well coated.

Once the oil is at the correct temperature, dip each marinated chicken thigh into the prepared batter, ensuring it is fully coated. Carefully place the battered chicken pieces into the hot oil, being careful not to overcrowd the pot. Fry for 8-10 minutes, turning occasionally, until lightly golden and cooked through.

Remove the chicken from the oil and place it on a wire rack set over a baking sheet to drain. Let the chicken rest for 5 minutes.

Increase the oil temperature to 375°F.

Return the partially fried chicken pieces to the hotter oil. Fry again for 3-5 minutes, or until the chicken is a deep golden brown and extra crispy.
