Preheat your oven to 180°C (350°F).

In a large mixing bowl, combine the 1/4 cup softened butter, 3/4 cup sugar, and 3 eggs.

Using a hand mixer, cream the mixture until it is light, fluffy, and pale in color.

To the creamed mixture, add the 1 cup rice flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.

Pour in the 1 cup coconut milk and 1/4 cup fresh milk.

Mix with the hand mixer on low speed until the batter is smooth and all ingredients are well combined. Be careful not to overmix.

Grease a round baking pan generously with extra butter. For an authentic touch, you can line the bottom of the pan with banana leaves before greasing.

Pour the prepared bibingka batter into the greased baking pan.

Bake in the preheated oven at 180°C for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is lightly golden.

Once baked, carefully remove the bibingka from the oven.

Brush the entire top surface of the hot bibingka generously with extra melted butter.

Evenly sprinkle grated cheese over the buttered top.

Return the bibingka to the oven and broil for 3-5 minutes, or until the cheese is melted, bubbly, and lightly browned. Watch carefully to prevent burning.

Remove from the oven. For extra richness, you can brush with more butter and add more cheese if desired. Let it cool slightly before slicing and serving warm.
