Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped yellow onion and cook until softened, about 5-7 minutes.

Stir in minced garlic and grated fresh ginger. Cook for another 1 minute until fragrant.

Add curry powder, ground cumin, and ground turmeric. Cook, stirring constantly, for 30 seconds to toast the spices.

Pour in the rinsed red lentils, vegetable broth, and diced tomatoes (undrained). Add salt and black pepper. Bring the mixture to a boil.

Once boiling, reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender and have absorbed most of the liquid. Stir occasionally to prevent sticking.

Stir in the chopped kale and fresh lemon juice. Cook for another 3-5 minutes, or until the kale has wilted to your desired tenderness.

Taste and adjust seasoning if necessary. Ladle the curried lentil and kale mixture into serving bowls.

Garnish with fresh chopped cilantro and toasted pumpkin seeds before serving.
