Take one silken tofu roll and place it onto one sheet of seaweed. Carefully roll the seaweed around the tofu to create a compact roll.

Lay the tofu and seaweed roll onto two wet rice paper sheets, overlapping slightly if needed to fully enclose the roll.

Dip two fried beancurd skin rolls into warm water until they become soft and pliable.

Lay out the softened fried beancurd skin rolls flat on your work surface.

Place the tofu roll (now wrapped in seaweed and rice paper) on top of the laid out beancurd skin.

Carefully roll everything up together, ensuring the tofu, seaweed, rice paper, and beancurd skin are all tightly enclosed.

Repeat steps 1-6 for the remaining tofu, seaweed, rice paper, and beancurd skin to create a total of 4 large rolls.

Cut each assembled roll into 6 equal pieces, resulting in 24 individual tofu roll pieces.

In a large pan or skillet, combine the water, soymilk, vegan oyster sauce, plum syrup, mushroom seasoning, nutritional yeast, and sesame oil.

Mix the sauce ingredients well until fully combined.

Gently place the cut tofu rolls into the pan with the sauce. Arrange them in a single layer if possible.

Spoon the sauce over the tofu rolls to ensure they are well coated.

Cover the pan and simmer the tofu rolls over medium-low heat for approximately 8 minutes, allowing them to absorb the flavors of the sauce.

Remove from heat. Serve the tofu rolls immediately, topped with chili oil (or Lao Gan Ma), fried shallots, sesame seeds, and fresh chopped coriander.

Taste and adjust seasoning as desired before serving.
