Preheat your air fryer to 400°F. In a large mixing bowl, combine the diced Russet potatoes with olive oil, kosher salt, black pepper, garlic powder, and paprika. Toss vigorously until the potatoes are evenly coated with the oil and spices.

Transfer the seasoned potatoes to the air fryer basket. Cook for 25 minutes, shaking the basket halfway through, until the potatoes are crispy and golden brown.

While the potatoes are cooking, preheat your oven to 375°F. Heat a large oven-safe skillet (preferably cast iron) over medium-high heat. Add the ground beef and diced yellow onion. Cook, breaking up the beef with a spatula, until the beef is thoroughly browned and the onions are softened, about 8-10 minutes.
