Preheat your oven to 220°C/428°F.

Cut the chicken breast into smaller pieces. Peel and roughly chop the small potato. Roughly chop the onion. Place the chopped chicken breast, potato, and onion into a food processor. Add 1/2 teaspoon salt, pepper to taste, and 1/2 teaspoon garlic powder. Blend the mixture until all ingredients are finely minced. Once minced, add the grated carrot and mix well with a spoon to incorporate it into the chicken mixture.

In a separate bowl, combine 60-70 grams of panko breadcrumbs with a pinch of salt. (Optional tip: To achieve a golden color, you can toast the breadcrumbs for 4-5 minutes in the oven before combining with salt.)

Take a small amount of the chicken mixture and shape it into a bite-sized ball in your hand. Place the ball into the prepared breadcrumbs and toss to completely coat it. Repeat with the remaining mixture.

Line a baking tray with parchment paper. Brush the parchment paper generously with olive oil. Arrange the coated chicken balls evenly on the prepared baking tray. Optionally, spray some additional olive oil on top of the chicken balls.

Bake the chicken bites in the preheated oven for 12-15 minutes. After the initial baking time, turn the balls over and continue to cook for another 7-8 minutes, or until they are cooked through and golden brown.

In a small bowl, combine 1 tablespoon of chilli sauce and 2 tablespoons of honey to create a honey chilli sauce. Serve the baked chicken bites warm with the honey chilli sauce or your favorite dipping sauce. Enjoy!
