Place the sliced beef in a bowl. Add sugar, baking soda, corn starch, oyster sauce, and 1 tablespoon of oil. Mix all ingredients thoroughly by hand until the beef is well coated and the marinade is absorbed. Set aside.

In a separate small bowl, combine dark soy sauce, light soy sauce, sugar, sesame oil, and water. Stir well to ensure the sugar dissolves. Set aside.

Gently loosen the ho fun noodles by hand, separating them to prevent sticking and breaking during cooking. Heat a wok until it is smoking hot. Add 1 tablespoon of oil to the hot wok. Add the loosened ho fun noodles to the wok. Stir-fry the noodles for approximately 1 minute, tossing and spreading them out to heat evenly and develop a slight char, contributing to "wok hei" (breath of the wok). Remove the noodles from the wok and set them aside.

Reheat the wok until it is smoking hot again. Add 1 tablespoon of oil. Add the marinated beef to the wok and stir-fry briefly until it is about 80% cooked. Add sliced ginger, white parts of spring onion, beansprouts, and sliced onion to the wok. Continue to stir-fry for about 30 seconds, quickly tossing the ingredients.

Return the pre-cooked ho fun noodles to the wok with the beef and vegetables. Pour the prepared sauce over all the ingredients. Add the green parts of spring onion. Stir-fry everything together quickly and vigorously, tossing constantly to ensure all ingredients are evenly coated with the sauce and heated through. Continue stir-frying for another 1-2 minutes until the noodles are fully cooked, the sauce is well distributed, and the dish is piping hot.

Transfer the Fried Beef Ho Fun immediately to a serving plate and serve hot.
