Pour in the chicken broth and heavy cream. Add the chopped sun-dried tomatoes. Stir all ingredients together to combine. Season the sauce with 1/2 teaspoon salt and 1/4 teaspoon black pepper (or to taste). Bring the sauce to a simmer and let it continue to simmer until it has slightly thickened, about 3-5 minutes.

Reduce the heat of the skillet to low. Stir in the grated Parmesan cheese, fresh spinach, and crumbled cooked bacon pieces. Continue stirring until the sauce becomes creamy and the fresh spinach has completely wilted, about 2-3 minutes.

Add the cooked rigatoni pasta directly into the skillet with the sauce. Add 1/4 cup of the reserved pasta water, adding more if needed to achieve desired sauce consistency. Toss everything together until the pasta is thoroughly coated with the creamy Tuscan sauce.

Slice the rested cooked chicken breasts into desired pieces. Serve the creamy Tuscan pasta in bowls, topping each serving with sliced chicken. Garnish with fresh chopped parsley, if desired, and serve immediately.
