Prepare the onions by slicing 1 large onion into thick rings. You will need 2 rings per 'burger'.

Heat a large pan or griddle over medium-high heat.

Place the thick onion rings onto the hot pan. Cook them until they begin to caramelize and soften, about 3-5 minutes per side. You may need to do this in batches.

While the onions are cooking, add 2 burger patties to the pan next to the onions (or in a separate pan if cooking in batches).

Season the burger patties generously with salt, pepper, garlic powder, paprika, and onion powder.

Cook the patties for 3-4 minutes on the first side, then flip them to cook the other side.

Once flipped, spread mustard on the cooked side of each patty.

Place 1 slice of cheese on top of each mustard-covered patty.

Cover the pan with a lid or dome to help the cheese melt, and continue cooking until the patties are cooked to your desired doneness and the cheese is fully melted, about 2-3 minutes.

Once the onions are caramelized and the cheese is melted, remove the onions and patties from the pan and set aside.

Repeat steps 4-10 for the remaining burger patties and onion rings.

To assemble each 'burger', place one caramelized onion ring down as the base.

Top the onion ring with one cheese-covered burger patty.

Add a dollop of special sauce, a few slices of pickles, some shredded lettuce, and a slice of tomato on top of the patty.

Place the second cheese-covered burger patty on top of the toppings.

Finish by placing the second caramelized onion ring on top to complete the 'burger'. Serve immediately.
