Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt. Set aside.

In a separate medium bowl, mash the ripe bananas with a fork until mostly smooth. Stir in the beaten egg, melted unsalted butter, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are fine.

Fold in the dark chocolate chunks until evenly distributed throughout the batter.

Pour the batter into the prepared loaf pan and spread evenly.

Bake for 55-65 minutes, or until a wooden skewer inserted into the center of the loaf comes out clean. If the top starts to brown too quickly, you can loosely tent it with aluminum foil.
