In a medium bowl, whisk together the eggs, mirin, and granulated sugar until well combined. Set aside.

Heat 1/2 tablespoon of vegetable oil in a large non-stick pan over medium heat. Pour in the egg mixture and scramble until cooked through but still soft and fluffy. Remove from pan and set aside.

Add the remaining 1/2 tablespoon of vegetable oil to the same pan. Add the diced Spam and cook over medium-high heat, stirring occasionally, until browned and slightly crispy on all sides. Remove from pan and set aside.

Divide the warm cooked white rice evenly among 4 large serving bowls. Arrange the scrambled eggs, drained canned tuna, fried diced Spam, and kimchi on top of the rice in separate sections.

Drizzle mayonnaise generously over all the ingredients in each bowl, creating a zig-zag pattern.

Sprinkle the chopped dried seaweed (nori) evenly over the top of each bowl.
