Preheat your oven to 350°F. Line a large baking sheet with parchment paper.

In a large mixing bowl, combine the melted unsalted butter, packed light brown sugar, and granulated sugar. Stir with a spatula until well combined and smooth.

Crack the large egg into the mixture, then add the vanilla extract. Mix thoroughly until all wet ingredients are fully incorporated.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

Take small portions of the cookie dough and shape them by hand into long, thin, rectangular pieces, resembling french fries. Aim for pieces about 1/2 inch wide and 3 to 4 inches long. Place them about 1 inch apart on the prepared baking sheet.

Bake for 10 to 12 minutes, or until the edges are golden brown and the centers are set. The cookie fries will be soft when hot but will firm up as they cool.

While the cookie fries are baking, prepare the dipping sauces. For the chocolate sauce, combine 1/2 cup semi-sweet chocolate chips and 1 tablespoon heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth. Repeat for the white chocolate sauce with the white chocolate chips and remaining heavy cream.

Let the cookie fries cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature with the prepared chocolate and white chocolate dipping sauces.
