Prepare the strawberry purée: In a small saucepan, combine the hulled and quartered strawberries, 2 tablespoons of granulated sugar, and 1 teaspoon of fresh lemon juice. Cook over medium heat, stirring occasionally, until the strawberries soften and break down, about 5-7 minutes.

Remove from heat and mash the strawberries with a fork or potato masher until mostly smooth. For a smoother purée, you can pass it through a fine-mesh sieve or blend it with an immersion blender. Set aside to cool completely.

Prepare the lemon posset: In a medium saucepan, combine the heavy cream and 1/2 cup of granulated sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture comes to a gentle simmer. Do not boil vigorously.

Reduce the heat to low and continue to simmer gently for 3 minutes, stirring occasionally. This helps to thicken the cream.

Remove the saucepan from the heat. Stir in the 1/4 cup of fresh lemon juice and lemon zest. Stir well to combine. The mixture will begin to thicken slightly.

Pour the lemon posset mixture evenly into 4 small serving glasses or ramekins. Allow to cool at room temperature for about 15 minutes.

Once slightly cooled, spoon a layer of the prepared strawberry purée over the top of each posset. You can swirl it gently with a toothpick if desired for a marbled effect.

Cover the glasses or ramekins with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the possets are fully set and chilled.
