Preheat your oven to 300°F. Line a baking sheet with parchment paper.

Carefully crack the 2 large eggs and separate the egg whites from the egg yolks. Place the egg whites into a clean, dry mixing bowl and the egg yolks into two separate small bowls or ramekins.

Add the 1 teaspoon of granulated sugar to the bowl containing the egg whites.

Using a hand mixer, whip the egg whites until stiff peaks form. The mixture should be fluffy, white, and hold its shape when the beater is lifted.

Spoon the whipped egg whites onto the prepared baking sheet, forming two cloud-like mounds, ensuring they are spaced apart.

Create a small indentation in the center of each egg white cloud using the back of a spoon.

Carefully place one egg yolk into the center indentation of each egg white cloud.

Sprinkle a pinch of salt and a dash of freshly ground black pepper over the egg yolks and egg whites.

Place the baking sheet into the preheated oven and bake for 5-7 minutes, or until the egg whites are lightly golden brown and the yolks are set to your desired consistency. For a runnier yolk, bake closer to 5 minutes; for a firmer yolk, bake closer to 7 minutes.
