In a large bowl, mash the 3 ripe bananas using a fork until mostly smooth but with some small chunks remaining. Add 1/2 cup shredded coconut to the mashed bananas and mix them together. Set aside.

In a separate large mixing bowl, combine 1/2 cup unsalted butter (softened), 1/2 cup granulated sugar, and 1/2 cup brown sugar. Beat with an electric mixer until the mixture is light and fluffy.

Beat in the 2 large eggs, one at a time, ensuring each is well combined before adding the next. Stir in 1 teaspoon vanilla extract.

In another bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon ground cardamom.

Gradually add the dry ingredient mixture to the wet ingredients, alternating with 1/4 cup buttermilk. Begin and end with the dry ingredients, mixing until just combined after each addition. Be careful not to overmix.

Gently fold the banana and coconut mixture into the cake batter.

Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Let the cakes cool in their pans for 10 minutes. After 10 minutes, invert the cakes onto a wire rack to cool completely.

While the cakes are cooling, prepare the cream cheese frosting. In a large bowl, beat 8 ounces softened cream cheese and 1/2 cup softened unsalted butter until smooth and creamy.

Gradually add 4 cups powdered sugar to the cream cheese mixture, beating until the frosting is light and fluffy. Stir in 1 teaspoon vanilla extract and a pinch of salt.

Once the cake layers are completely cool, use a serrated knife to level the tops if necessary to create flat surfaces. Place one cake layer on a serving plate or cake stand. Spread a generous layer of cream cheese frosting over the first cake layer.

Carefully place the second cake layer on top of the frosted first layer. Frost the top and sides of the entire cake with the remaining cream cheese frosting, using an offset spatula for smooth application.

Finish by sprinkling toasted coconut flakes generously over the top of the cake for decoration.
