Add 2 tablespoons of olive oil to a large pot over medium heat.

Add 50 grams of butter to the pot and let it melt.

Add 200 grams of pancetta to the pot and fry until it is crispy. Once crispy, remove the pancetta from the pot and set aside.

Add the 2 diced carrots, 2 diced celery sticks, and 1 large diced onion to the same pot. Cook until the vegetables have softened.

Add 4 minced garlic cloves and cook for 1 minute until fragrant.

Add 250 grams of beef mince and 250 grams of pork mince to the pot. Brown the meat, breaking it up with a spoon.

Pour in 150ml of white wine, scraping up any browned bits from the bottom of the pan to deglaze.

Add 500ml of milk to the pot and bring it to a simmer. Cook until the milk has almost completely evaporated, stirring occasionally.

Add 500ml of chicken stock and 2 bay leaves.

Season generously with salt and pepper to taste.

Bring the sauce to a simmer, then reduce the heat to low. Cover the pot and cook for at least 2 hours, or up to 4 hours, stirring occasionally to prevent sticking. For this recipe, we will assume a 2-hour simmer.

While the sauce is finishing, cook your desired pasta according to package directions.

Serve the White Bolognese sauce over the cooked pasta, topped with a generous amount of grated Parmesan cheese.
