After 20 minutes, remove the pork from the oven. Uncover the pot and return it to the oven. Increase the oven temperature to 425°F. Continue to bake for another 10-15 minutes, stirring occasionally, until the liquid has evaporated and the pork is browned and crispy.

While the pork is crisping, warm the corn tortillas. You can do this by wrapping them in a damp paper towel and microwaving for 30-60 seconds, or by heating them in a dry skillet over medium heat for about 30 seconds per side until pliable.

To assemble the tacos, fill each warm tortilla with a generous spoonful of the crispy pork, top with a spoonful of the creamy slaw, and garnish with fresh cilantro. Serve immediately with lime wedges on the side.
