Dice the chicken, slice the onion, and mince the garlic.

In a medium bowl, combine the prepped chicken, sliced onion, and minced garlic.

Add the honey, soy sauce, lemon juice, and pepper to the bowl with the chicken mixture. Mix thoroughly until all ingredients are well coated.

Heat a large pan over high heat. Once hot, add the chicken mixture to the pan.

Cook on high heat for a couple of minutes, stirring occasionally, until the chicken starts to brown.

Reduce the heat to medium and continue to simmer. Stir frequently to prevent burning, allowing the sauce to thicken to your desired consistency. This should take about 10-12 minutes.

Once the chicken is cooked through and the sauce has thickened, remove from heat. Plate the chicken and garnish with chopped spring onion, if desired. Serve immediately.
