Cut the chicken thigh into slightly small bite-sized pieces.

Cut the leek into chunks.

In a pan, cook the chicken and leek until nicely browned. The char marks on the chicken and leek will add flavor to the dish.

In a separate pot, add the soup ingredients: 1000 ml water, 4 tablespoons soy sauce, 4 tablespoons mirin, 2 teaspoons sugar, and 2 teaspoons dashi powder. Bring the mixture to a boil.

In a separate pot, cook the 400 g of soba noodles according to package directions.

Divide the cooked soba noodles among four serving bowls. Top with the chicken and leek from the soup. Pour the flavorful broth over the noodles, chicken, and leek.

Garnish with shichimi chili powder on top as desired.
