Preheat your oven to 180°C. Grease and flour two 23cm round cake pans.

In a large bowl, sift together the all-purpose flour, 100g cocoa powder, granulated sugar, baking soda, baking powder, and salt.

In a separate medium bowl, whisk together the large eggs, buttermilk, vegetable oil, and 2 teaspoons vanilla extract.

Add the wet ingredients to the dry ingredients and mix well with a whisk until just combined. Do not overmix.

Stir in the hot water or coffee until the batter is smooth and fully incorporated.

Pour the batter evenly into the two prepared 23cm round cake pans.

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cake layers from the oven and let them cool in the pans for 10-15 minutes before inverting them onto a wire rack to cool completely. This cooling process will take at least 45 minutes to an hour.

While the cakes are cooling, prepare the fudge frosting. In a large bowl, beat the softened unsalted butter with an electric mixer until it is creamy and light.

Add 100g cocoa powder to the butter and mix well until fully incorporated and smooth.

Gradually add the powdered sugar and milk to the butter mixture, alternating between the two, mixing on low speed until the frosting is smooth and fluffy. Scrape down the sides of the bowl as needed.

Stir in 1 teaspoon vanilla extract until fully combined.

Once the cake layers are completely cool, place one cake layer on your serving plate or cake stand. Spread a generous layer of the prepared fudge frosting evenly over the top.

Carefully place the second cake layer on top of the first, aligning it as best as possible.

Cover the entire cake, including the sides and top, with the remaining frosting, using an offset spatula or knife to smooth it out.

Decorate with chocolate shavings or sprinkles, if desired, before serving.
