Take 240g of Biscoff cookies (approximately 2 sleeves) and place them in a food processor. Process until fine crumbs are formed.

Transfer the Biscoff cookie crumbs to a mixing bowl. Add 1/2 cup of Biscoff cookie butter and 2oz of softened cream cheese to the bowl.

Use a spatula to mix all the ingredients together until a cohesive, fudgy dough forms.

Take small portions of the dough and roll them into 1-inch balls. Place the rolled balls onto a parchment-lined tray.

Freeze the truffle balls for 15-20 minutes to firm them up.

While the truffle balls are chilling, melt 1.5 cups of white chocolate chips or wafers.

Once the balls are firm, dip each frozen Biscoff ball into the melted white chocolate, ensuring it is completely coated.

Gently tap off any excess white chocolate from the truffle.

Place the coated truffle back onto the parchment-lined tray. Drizzle additional melted white chocolate over the coated truffles. Immediately sprinkle some Biscoff crumbs (from the initial 240g of cookies) over the drizzled white chocolate for decoration.

The Biscoff truffles are now ready to enjoy.
