Preheat your oven to 392°F (200°C). Line a baking tray with parchment paper.

In a large bowl, combine the self-raising flour, 0% Greek yogurt, garlic powder, oregano, and salt. Mix with a spoon until clumps form, then knead by hand until a smooth dough ball is achieved. If the dough is too sticky, add a small amount of flour, 1 teaspoon at a time, until it's manageable.

Lightly flour a clean surface. Roll the dough into a log shape, then slice it into 8 equal pieces.

Flatten each dough piece into a circular shape, about 4-5 inches in diameter.

Place 4 of the dough circles onto the prepared baking tray. On each of these 4 dough circles, spread 2 tablespoons of pizza sauce.

Sprinkle about 1/4 cup of low fat grated cheese (approximately 20g) over the pizza sauce on each of the 4 circles. Layer about 1/4 cup of turkey pepperoni (approximately 15g) on top of the cheese for each bun.

Place the remaining 4 dough circles on top of the pepperoni layers, effectively creating a 'bun' with the filling inside. Gently press the edges to seal.

On the top of each assembled bun, spread another 2 tablespoons of pizza sauce. Sprinkle another 1/4 cup of low fat grated cheese (approximately 20g) on top. Finally, arrange about 1 tablespoon of turkey pepperoni slices (approximately 5g) on the very top of each bun.

Bake for 20-25 minutes, or until the cheese is melted and golden brown, and the crust is cooked through. The internal temperature should reach 200-205°F (93-96°C).

Allow to cool slightly before serving. These buns can be enjoyed immediately or stored for later. To reheat, remove any foil and air-fry or microwave for a couple of minutes until hot and cheesy.
