Wash the strawberries thoroughly. Remove the green leafy part by twisting it off. Using a paring knife, carefully core the center of each strawberry to create a cavity for the filling. If desired for presentation, slice a small, even portion off the bottom of each strawberry so they can stand upright.

In a mixing bowl, combine the softened cream cheese and sifted powdered sugar. Add 1 teaspoon of vanilla paste (or extract). Mix until the filling is smooth and well combined. Taste and add more vanilla if desired.

Transfer the cheesecake filling into a piping bag. Pipe the cheesecake filling into the cored cavities of each prepared strawberry.

Place the Biscoff cookies (or Graham crackers) into a plastic bag. Crush the cookies into fine crumbs.

Arrange the filled strawberries on a serving plate. Sprinkle the crushed cookie crumbs generously over the top of each filled strawberry. Drizzle melted chocolate over the strawberries for a final touch.
