Preheat your oven to 375°F. Lightly grease a pie pan.

In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula as it cooks, until it is fully cooked through and no pink remains.

Drain any excess fat from the skillet. Stir in the Kristy's taco seasoning, water, tomato paste, and fat-free refried beans. Mix well to combine all ingredients.

Remove the skillet from the heat. Stir in the low-fat cottage cheese, eggs, and Kristy's homemade salsa until thoroughly combined.

Place one low-carb tortilla in the bottom of the greased pie pan. Spread 1/3 of the meat mixture evenly over the tortilla. Sprinkle 3/4 cup of shredded Cheddar Jack cheese over the meat layer.

Place a second low-carb tortilla on top of the cheese layer. Spread another 1/3 of the meat mixture evenly over this tortilla.

Place the third and final low-carb tortilla on top of the second meat layer. Spread the remaining 1/3 of the meat mixture evenly over this top tortilla.

Sprinkle the remaining 3/4 cup of shredded Cheddar Jack cheese over the top layer of meat.

Bake the burrito pie in the preheated oven for 28 to 30 minutes, or until the cheese is melted, bubbly, and lightly golden brown.

Remove from the oven, let rest for a few minutes before slicing and serving.
