Heat 2 tablespoons of oil in a large pan or wok over medium-high heat. Add the bite-sized chicken pieces and cook, stirring occasionally, until they are golden brown and fully cooked through.

Add the minced garlic and minced ginger to the pan with the cooked chicken. Sauté for about 30 seconds to 1 minute, until fragrant, being careful not to burn the garlic.

Add the sliced onions and bell peppers to the pan. Stir-fry for 2 to 3 minutes, just until the vegetables are slightly tender-crisp. You want them to retain a bit of their crunch.

While the vegetables are cooking, prepare the sauce. In a medium bowl, combine the soy sauce, honey (or brown sugar), oyster sauce, hoisin sauce (if using), sesame oil, and black pepper. In a separate small bowl, whisk together the cornstarch and 3 tablespoons of water until smooth, then add this mixture to the main sauce bowl. If using, add the chili flakes now. Whisk all sauce ingredients together until well combined.

Pour the prepared sauce into the pan with the chicken and vegetables. Stir continuously to coat everything evenly. Cook for 2 to 4 minutes, or until the sauce thickens and becomes glossy, beautifully coating the chicken and vegetables.

Remove the pan from the heat. Stir in the chopped green onions and sprinkle with sesame seeds.

Serve the Sticky Garlic Chicken & Veggie Stir-Fry immediately with steamed rice or noodles.
