Empty one package of turkey stuffing mix into a large bowl. Pour milk over the stuffing to hydrate it, then set aside.

Finely chop the fresh parsley and onion using a food processor or by hand.

Add the chopped parsley and onion, egg, ground turkey, garlic powder, salt, and black pepper to the bowl with the hydrated stuffing.

Gently mix all the ingredients together by hand until just combined, being careful not to overmix.

Using an ice cream scoop, portion and form large meatballs. Heat cooking oil in a large oven-safe skillet over medium-high heat. Place the meatballs into the hot pan and sear until one side is browned, about 3 to 4 minutes.

Preheat oven to 375°F. Transfer the skillet with the seared meatballs to the preheated oven. Bake for 15 minutes or until cooked through. Halfway through baking (around 7 to 8 minutes), flip the meatballs to ensure even browning.

While the meatballs are baking, prepare the mashed potatoes, green beans, and cauliflower. Warm the gravy.

Plate the mashed potatoes, green beans, and cauliflower. Add two cooked meatballs to each plate and finish by pouring warm gravy generously over the meatballs and sides.
