In a microwave-safe bowl, combine the diced apple, 2 tablespoons of sweetener, 1/4 teaspoon of cinnamon, 1/4 teaspoon of vanilla extract, and 1/4 cup of water. Stir well to combine.

In a separate small bowl, whisk together 1 tablespoon of cornstarch and 1 tablespoon of water until a smooth slurry forms. Add this cornstarch slurry to the apple mixture and stir thoroughly.
