In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.

Melt 1 tablespoon of butter in a large non-stick skillet over medium-low heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are softly scrambled and just set. Remove from heat and set aside.

Lay out the 8 slices of bread on a clean surface. Spread 1 1/2 tablespoons of softened butter evenly on one side of 4 bread slices. These will be the top slices of your melts.

Spread the remaining 1 1/2 tablespoons of softened butter evenly on one side of the other 4 bread slices. These will be the bottom slices. Place these butter-side down in a large skillet or on a griddle over medium heat.

Immediately layer each bottom bread slice with 1/4 cup of shredded cheddar cheese, then a few slices of deli ham, followed by an even portion of the scrambled eggs. Top the eggs with another 1/4 cup of shredded cheddar cheese.

Place the buttered top slices of bread, butter-side up, on top of the assembled melts. Cook for 3 to 5 minutes per side, or until the bread is golden brown and crispy, and the cheese is completely melted and gooey.

Carefully remove the melts from the skillet, slice in half if desired, and serve immediately.
