Preheat your oven to 375°F. Place the bone-in, skin-on chicken thighs in a large bowl.

Add 3 tablespoons of olive oil, 2 teaspoons of salt, 2 teaspoons of garlic powder, 1 teaspoon of smoked paprika, 1 teaspoon of onion powder, 1 teaspoon of coriander, and 1 teaspoon of cumin to the chicken.

Using your hands, thoroughly mix the chicken with the seasonings until each thigh is well coated.

Heat a large oven-safe pan (such as a cast iron skillet) over medium-high heat. Once hot, place the seasoned chicken thighs skin-side down in the pan to sear.

Sear the chicken for 6-8 minutes, or until the skin is golden brown and crispy. Flip the chicken and sear the other side for 1-2 minutes.

Remove the browned chicken from the pan and set it aside on a plate.

Add the 1/2 diced yellow onion and 1 diced jalapeno to the same pan. Sauté for 5-7 minutes, scraping up any browned bits from the bottom of the pan, until the onion softens.

Add the 2 minced garlic cloves and 2 teaspoons of minced ginger to the pan. Sauté for 1 minute until fragrant.

Stir in 1 tablespoon of gochujang, mixing it well with the sautéed vegetables.

Pour in 1 1/2 cups of crushed tomatoes and add a pinch of salt. Stir to combine.

Squeeze in the juice from 1/2 lemon.

Pour in 1 cup of coconut milk and stir to thoroughly combine all the sauce ingredients.

Return the seared chicken thighs to the pan, nestling them into the sauce.

Cover the pan tightly with aluminum foil.

Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.

Carefully remove the pan from the oven and take off the foil. Garnish with fresh chopped cilantro, if desired.

Serve the Brazilian Spicy Coconut Chicken hot, optionally with rice.
