In a medium pot, combine the ube extract and erythritol.

Pour in the Vita Protein milk.

Place the pot over low heat and gently warm the mixture, stirring constantly, until the erythritol has completely dissolved. Do not boil.

Remove the pot from the heat. Add the Vita Protein vanilla whey and mix thoroughly with a whisk until it is well combined and there are no lumps.

Add the 2 whole eggs and 2 egg yolks to the mixture. Whisk well until everything is fully incorporated and smooth.

Strain the entire ube flan mixture through a fine-mesh sieve into a clean bowl. Repeat this straining process a second time to ensure an incredibly smooth and silky consistency.

Carefully pour the strained mixture into individual ramekins, distributing it evenly.

Preheat your oven to 170°C. Arrange the filled ramekins in a baking dish. Pour hot water into the baking dish, creating a water bath that comes about halfway up the sides of the ramekins. Carefully transfer the baking dish to the preheated oven and bake for 45-50 minutes, or until the flan is set but still slightly wobbly in the center.

Once baked, carefully remove the ramekins from the water bath and let them cool completely at room temperature. Once cooled, transfer the ramekins to the refrigerator and chill for a minimum of 4 hours, or preferably overnight, to allow the flan to fully set.

To serve, run a thin knife around the edge of each ramekin, then invert onto a serving plate. Enjoy your high-protein ube flan!
