In a large pot or saucepan, brown the sliced smoked sausage over medium-high heat. Once browned, remove the sausage and set it aside.

Add the unsalted butter to the same pot. Once melted, add the minced garlic, onion powder, garlic powder, shrimp bouillon, smoked paprika, chili powder, and cayenne pepper. Stir continuously for 1-2 minutes until the garlic is fragrant and the spices are well incorporated.

Stir in the red curry paste until it is fully incorporated with the garlic and spice mixture.

Pour in the coconut milk and stir until the mixture is smooth and creamy. Add the palm sugar and fish sauce, continuing to stir until the palm sugar has dissolved and the sauce is completely smooth.

Add the browned smoked sausage, shrimp, diced red potatoes, and sliced sweet corn to the pot. Stir gently to ensure all ingredients are coated in the sauce.

Reduce the heat to low, cover the pot, and simmer for 2-3 minutes, or until the shrimp are cooked through and the potatoes are tender-crisp. If using, stir in the sliced Thai chili.

Carefully plate the Thai Inspired Seafood Boil and serve immediately. Enjoy!
