Prepare the vegetables: Cut the white onions into thin strips, shred the cabbage, and julienne the carrots.

Prepare the sauce: In a medium bowl, combine soy sauce, dark soy sauce, oyster sauce, granulated sugar, black pepper, rice vinegar, cornstarch, sesame oil, and MSG (if using). Whisk until well combined and set aside.

Marinate the chicken: In a separate bowl, add the thinly sliced chicken breast. Add soy sauce, rice wine vinegar, oil, black pepper, salt, and cornstarch. Mix thoroughly by hand to ensure the chicken is evenly coated.

Cook the chicken: Heat 1 tablespoon of oil in a large wok or a large pan over high heat. Once the oil is shimmering, add the marinated chicken. Cook for 3 to 4 minutes, stirring occasionally, until the chicken is fully cooked through and lightly browned. Remove the cooked chicken from the wok and set it aside.

Cook aromatics and vegetables: Add another tablespoon of oil to the same wok. Add the minced garlic and the white parts of the chopped green onions. Sauté for 30 seconds until fragrant. Add all the prepared vegetables (onions, carrots, and cabbage) to the wok. Cook, stirring frequently, until the vegetables are semi-soft, about 3-5 minutes.

Combine and finish: Add the cooked chow mein noodles to the wok with the vegetables. Pour the prepared sauce over the noodles and vegetables. Toss everything well to combine and ensure the noodles and vegetables are evenly coated with the sauce. Return the cooked chicken to the wok. Add the green parts of the green onions. Mix again gently to incorporate all ingredients.
