Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion to the pot and cook until softened, which takes about 5-7 minutes.

Add the minced garlic and minced ginger to the pot and cook for 1 minute until fragrant.

Add the ground beef and cook until it is browned, breaking it up with a spoon as it cooks.

Drain any excess fat from the pot if desired.

Stir in the curry powder, cumin, turmeric, and cayenne pepper. Cook for 1 minute until the spices are fragrant.

Add the crushed tomatoes, rinsed red lentils, and beef broth to the pot. Bring the mixture to a boil.

Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the lentils are tender.

Stir in the full-fat coconut milk. Season the curry with salt and pepper to taste. Simmer for another 5 minutes.
