Preheat the oven to 375°F. Line baking sheets with parchment paper and set them aside.

In a large bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar using an electric hand mixer until the mixture is smooth and light and fluffy. Then, beat in the large egg and vanilla extract with the electric hand mixer until combined, for about 1 minute.

In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set this dry mixture aside.

Gradually mix the dry ingredients into the wet ingredients using an electric hand mixer until the dough is fully combined.

Fold in the semi-sweet chocolate chips into the dough using a spatula.

Prepare the s’mores base. Lay out the graham cracker squares on the prepared baking sheets. Place a piece from the Hershey bar on top of each graham cracker square. Then, top each chocolate piece with one regular-sized marshmallow.

Scoop 2–3 tablespoons of cookie dough and roll it into a ball. Flatten the dough in your hand and make a small well in the center.

Place the flattened dough on top of each prepared graham cracker, chocolate, and marshmallow stack, centering it over the marshmallow. Wrap the dough around the stack, sealing it as much as possible. It does not need to be perfect. (Tip: You can split the marshmallows in half to make wrapping the dough around them easier).

Bake the cookies for about 10-12 minutes, or until they are just barely starting to brown.

Let the baked cookies sit on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Optional finishing touch: While the cookies are still warm (but mostly cooled), press an additional piece of Hershey’s/Chocolate bar on top of each cookie for decoration.
