In a medium bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until well combined and smooth.

Gently wash and prepare the berries: hull and slice the strawberries, and ensure blueberries and raspberries are clean.

To assemble the parfaits, get four clear glasses or jars. Start by spooning about 1/4 cup of the yogurt mixture into the bottom of each glass.

Layer with about 1/4 cup of mixed berries over the yogurt.

Sprinkle about 2 tablespoons of granola over the berries.

Repeat the layers: another layer of yogurt, followed by berries, and then granola. Continue until the glasses are full, ending with a layer of granola and a few extra berries on top for garnish.

For best results, cover the parfaits and chill in the refrigerator for at least 30 minutes to allow the flavors to meld and the granola to soften slightly, if desired. Serve chilled.
