Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch or 9x9 inch baking dish with butter.

In a medium bowl, combine the diced apples with 2 tablespoons of granulated sugar and 1/2 teaspoon of ground cinnamon. Toss to coat evenly and set aside.

In a large mixing bowl, whisk together the old-fashioned rolled oats, all-purpose flour, 1/4 cup granulated sugar, baking powder, baking soda, 1 teaspoon ground cinnamon, and salt. Make sure there are no clumps.

In a separate medium bowl, whisk the large eggs, milk, melted unsalted butter, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix. Fold in the prepared apple mixture.

Pour the oatmeal mixture into the prepared baking dish and spread evenly.

Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set. A knife inserted into the center should come out mostly clean.

Remove from the oven and let cool for a few minutes before serving. Serve warm, optionally with a drizzle of maple syrup or a dollop of yogurt.
