Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a medium bowl, combine the cooked white quinoa, 2 tablespoons of soy sauce, and 2 tablespoons of sesame oil. Mix well to ensure the quinoa is evenly coated.

Spread the seasoned quinoa in a single layer onto the prepared baking sheet.

Roast the quinoa in the preheated oven for 20-25 minutes, or until it is golden brown and crispy, stirring once halfway through.

While the quinoa is roasting, prepare the salad ingredients. In a large bowl, combine the blanched and chopped asparagus, blanched and chopped snow peas, diced small cucumber, diced big avocado, and chopped mint leaves. Set aside.

Prepare the tahini/sesame dressing: In a separate bowl, whisk together the raw tahini, 1 1/2 tablespoons of salty soy sauce, 1 tablespoon of sesame oil, 3 ice cubes, the juice of 2 lemons, minced garlic, minced ginger, 1/2 cup of ice water, and 1/4 teaspoon of salt until well combined and smooth.

If the dressing is too thick, add more ice water or lemon juice, 1 teaspoon at a time, until it reaches your desired consistency.

Once the crispy quinoa is ready, remove it from the oven and let it cool slightly.

Add the crispy quinoa to the bowl with the prepared salad ingredients. Drizzle generously with the tahini/sesame dressing.

Toss gently to combine all ingredients and serve immediately. Enjoy this crazy salad!
