Remove the cooled potatoes from the ice bath and thoroughly dry them with paper towels. This step is important for the batter to adhere properly.

Dip a handful of dried potato sticks into the batter, ensuring they are thinly coated. Scrape off any excess batter from the sides before carefully adding them to the hot oil.

Continue frying the remaining potatoes in batches, maintaining the oil temperature at 375°F, until all potatoes have had their first fry.

Once all potatoes have completed their first fry, bring the oil back up to 375°F. Add all of the par-fried potatoes back into the hot oil for a second fry until they achieve a deep golden brown color and are crispy.

For an extra crispy result, you can repeat the second frying step for a third fry, ensuring the oil temperature is maintained.

Remove the finished fries from the oil and immediately transfer them to a clean baking rack or a bowl lined with paper towels to drain any excess oil.
