Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a large bowl, sift together the all-purpose flour, salt, baking powder, and granulated sugar. Set aside.

In a separate medium bowl, combine the melted shortening with the beaten egg. Whisk until well combined.

Add the milk and lemon juice to the wet ingredients and mix thoroughly.

Pour the wet ingredients into the dry ingredients. Mix until a soft dough forms, being careful not to overmix.

Fold in the 1 cup of chopped peanuts until evenly distributed throughout the dough.

Using a teaspoon, drop rounded portions of dough onto the prepared baking sheet, leaving about 1 inch between each cookie.

Sprinkle additional chopped peanuts on top of each cookie before baking.

Bake for 15 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
