Prepare the Burger Sauce: In a small bowl, combine mayonnaise, sweet relish, ketchup, yellow mustard, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and Worcestershire sauce. Mix thoroughly until well combined. Stir in the French's Dill Pickle Mustard Spread and mix again. Set aside.

Prepare the Onions and Jalapeños: Thinly slice the yellow onion and jalapeño. A mandoline can be used for very thin slices.

Prepare the Beef Patties: Divide the 1 pound of 80/20 ground beef into four equal 4-ounce portions. Roll each portion into a tight ball.

Cook the Smash Burgers: Heat a large cast-iron skillet over high heat until very hot, about 3-5 minutes. Lightly butter the burger buns and toast them in a separate pan or on a griddle until golden brown, then set aside.

Place one 4-ounce beef ball into the hot skillet. Immediately cover the beef ball with a piece of parchment paper. Using a sturdy burger press or a heavy, flat spatula, firmly smash the beef ball into a very thin patty, about 1/4 inch thick. Remove the parchment paper.

Season the patty generously with salt, freshly ground black pepper, and a light dusting of garlic powder. Cook for 1-2 minutes until the edges are crispy and browned. Flip the patty.

Immediately, on the same skillet next to the cooking patty, add a small pile of thinly sliced onions and thinly sliced jalapeños. Place a second 4-ounce beef ball directly on top of the onions and jalapeños in the skillet. Smash this patty down as described in step 5.
Place one slice of American cheese on top of the first cooked patty. Cook the second patty for 1-2 minutes, seasoning with salt, pepper, and garlic powder after smashing. Once the second patty is cooked through, use a spatula to carefully remove the first cooked patty (with cheese, onions, and jalapeños) from the skillet and place it on a plate.

Flip the second patty. Place a slice of American cheese on top of the second patty. Cook for another minute until the cheese is melted and the patty is cooked through. Remove from the skillet and place on the plate with the first patty.

Repeat steps 5-9 for the remaining two beef balls, onions, jalapeños, and cheese slices, cooking one patty at a time and stacking them on the plate.

Assemble the Burger: Place a buttered and toasted bottom bun on a serving plate. Stack the three cooked patties (each with melted cheese, onions, and jalapeños) onto the bottom bun. Drizzle a generous amount of the prepared burger sauce over the stacked patties. Place the buttered and toasted top bun on top.

Serve the Jalapeño Smash Burgers immediately. Enjoy with your favorite beverage!
