Preheat your oven to 350°F (177°C).

Pour the 2 large egg whites into a mixing bowl.

Add 1/2 teaspoon of vanilla extract to the egg whites and whisk to combine.

Pour 4 tablespoons of melted butter into the mixture and whisk until thoroughly incorporated.

Using a sieve, sift 1/2 cup of all-purpose flour into the bowl.

Immediately after removing the baked cookie from the oven, while it is still warm and pliable, quickly remove it from the baking mat using a thin spatula.

If adding a fortune, place it in the center of the warm cookie. Fold the warm cookie in half.

Then, fold the cookie over the rim of a glass or a chopstick to create the classic fortune cookie shape.

Place the shaped cookies into a muffin tin to help them hold their shape as they cool and crisp up. Repeat steps 10-14 for the remaining batter. Allow cookies to cool completely for at least 15 minutes before serving.
