Lay a large flour tortilla flat on a clean work surface or cutting board. Arrange 6 slices of salami evenly over the tortilla, leaving a small border around the edges.

Place 6 slices of cheddar cheese over the salami, ensuring good coverage. Repeat this process with the second tortilla, salami, and cheddar cheese.

Tightly roll each tortilla into a log. Press firmly as you roll to ensure the pinwheels hold their shape.

Using a sharp knife, cut each rolled tortilla log into 4-5 equal-sized pinwheel segments, approximately 1 inch thick.

Line your air fryer basket with parchment paper. Arrange the pinwheel segments in a single layer, forming a circular or flower-like pattern. Sprinkle the shredded mozzarella cheese generously over the top of the pinwheels.

Preheat your air fryer to 375°F. Place the basket with the pinwheels into the air fryer and cook for 8-10 minutes, or until the cheese is melted, bubbly, and golden brown, and the tortilla edges are slightly crispy.

Carefully remove the pinwheels from the air fryer. Let them cool for a minute or two before serving, as the cheese will be very hot and stretchy.
