Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a large mixing bowl, combine the smooth peanut butter, granulated sugar, and crack the large egg into the mixture.

Using a sturdy spatula or a stand mixer, thoroughly mix all three ingredients together until a uniform, pliable cookie dough forms. Ensure there are no streaks of unmixed ingredients.

Take small, roughly equal portions of the dough (about 1 1/2 tablespoons each) and roll them into balls between your palms. Place the dough balls onto the prepared baking sheet, leaving about 2 inches of space between them. You should get approximately 12 cookies.

Using a fork, gently press down on the top of each dough ball to flatten it slightly. Rotate the fork 90 degrees and press again to create the traditional criss-cross pattern on top of each cookie.

Bake the cookies in the preheated oven for 9 to 10 minutes, or until the edges are lightly golden and the cookies are set but still soft in the center.
